Items get categorized either automatically by the Plate IQ system or by users themselves. Categorization is NOT related to accounting, however, it does help map items from a category to a specific GL code.
After you make sure your items are well categorized, you can go to the accounting page, click on a vendor and add the categories associated to each account.
